Sunday marks the Autumnal Equinox!
On Sunday, the sun will move from the Northern Hemisphere to the Southern Hemisphere. It will pass overhead everywhere along the Earth’s equator on that date, and the sun will rise exactly in the east and set exactly in the west. Day and night will also be of roughly equal length.
The cool, crisp air, the Autumnal Equinox and having football on TV naturally got me to thinking about the perfect fall dish — chili!
Then, I discovered THIS recipe, for Chili Sweet Potato Fries via FoodieGonePaleo.com! Delicious! It’s like a Paleo version of chili cheese fries, without the cheese.
For the sweet potato fries, you slice your sweet potatoes into wedges, coat them in olive oil or coconut oil and salt and pepper, and then bake them for about 30 minutes, until they reach desired tenderness.
Then, the chili!
I would most likely make this in the slow cooker, because it’s so much easier!
Use your favorite chili ingredients:
- ground beef
- green/red pepper
- fire-roasted tomatoes
- tomato paste
- beer or Apple Ale
- Frank’s Red Hot
The chili roasts in the slow cooker for 4-6 hours on high, 6-8 hours on low — so that all the flavors have a chance to meld together.
Then, simply pour the chili over the fries, top with sour cream (unless you are dairy free!) and scallions, and dig in!
Perfect for a lazy, Fall afternoon while watching some football!
