Thursday’s “Daily Delicious” features a recipe I discovered on Pinterest while browsing Paleo recipes — a delicious and labor-intensive recipe for homemade Paleo nachos!
The boyfriend made some layered, baked nachos the other night, and while delicious — they certainly aren’t Paleo! That didn’t stop me from having a plate of my own — but I need to knock this off!!!
So wouldn’t you know it — the very next day I discovered a recipe for Paleo nachos on Pinterest!
This recipe utilizes plantain chips instead of the usual non-Paleo tortilla chips to serve as the base of the nachos.
Plantains are a member of the banana family. They are a starchy, low in sugar variety that is cooked before serving as it is unsuitable raw.
Plantains are native to India and are grown most widely in tropical climates. Plantains are sometimes referred to as the pasta and potatoes of the Caribbean.
Topping the plantain chips (which I would encourage making on your own via the oven or dehydrator) is some seasoned ground beef (make your own taco seasoning!), jalapeno, tomato, onion, salsa, black olives and cilantro.
Topping the plantain chips, meat, and veggie toppings is guacamole (make your own!), and homemade nacho cheese sauce.
This is a somewhat complicated recipe, because everything is homemade.
For the nachos, you will obviously have to brown up your ground beef and prep your veggies.
You’ll have to be sure to dehydrate your plantain chips ahead of time.
I’d also advise making your guacamole and nacho cheese sauces ahead of time so the flavors have a chance to meld.
If you do all the prep in advance, all you’ll have to do is cook up your meat, perhaps sautee up your veggies a bit, build your nachos and enjoy!
