Daily Delicious: Huevos Rancheros and cauliflower tortillas

Tuesday’s “Daily Delicious” comes courtesy SlimPalate.com — a blog that is maintained by Josh, a 17-year-old who was able to lose over 100 pounds in a year-and-a-half by following a Paleo lifestyle.

I’m not sure if I have featured Slim Palate here on the blog before, but this blog is definitely one of my favorite Paleo blogs — and the fact that it is maintained by a high school student makes it that much more impressive!

I discovered a post from back in April, on the PaleoParents.com blog, during which Josh wrote a guest blog, featuring his Huevos Rancheros recipe.

This recipe utilizes Josh’s extremely creative recipe for Paleo tortillas, made from CAULIFLOWER, a recipe that, when it was first released, took the Paleo-sphere by storm!

Just LOOK at these tortillas! Can you believe they’re made from cauliflower?!

ANYWAYS, I think this recipe for Huevos Rancheros would make a perfect weekend breakfast/brunch, weekday lunch or weeknight dinner option! Essentially, it is a perfect fit for any meal!

And, this meal can be assembled within a half-hour!

Besides the cauliflower tortillas (which I would make ahead), ingredients include eggs, onion, cilantro, sweet potato and avocado.

The sweet potatoes are chopped and sauteed, the eggs are cooked over-easy — and then the eggs are placed on the tortillas, the sweet potatoes are poured over the eggs, and the whole thing is topped with avocado.

The only addition I might consider making to this recipe is BACON (of course) — but otherwise it looks like a delicious and super healthy meal to enjoy any time of the day!
