Friday was busy for me, paying bills, running errands, cleaning and taking Hatchet to his (very expensive!) vet appointment!
So, I wanted something relatively easy for dinner Friday night — and decided upon a recipe I featured on the blog last week, as a “Daily Delicious” recipe: Deconstructed Cheeseburgers/Cheeseburger Salad — a recipe I discovered via RealFoodOutlaws.com!
My version of this recipe included the following ingredients:
- 1 lb. ground beef (cooked in a pan with seasoning, salt + pepper)
- bacon (baked in the oven)
- red onion
- shittake mushrooms
- green leaf lettuce
- Wisconsin beer cheese
- sun-dried tomatoes
- sweet potatoes (2-3)
First, the sweet potatoes were sliced into french fries and set aside.
**Feel free to serve up this meal with your favorite cheeseburger condiments!
It was a delicious, low-carb way to have a Friday night burger night — and after a very busy day, it sure hit the spot!
