What’s Ta Eat?! Deconstructed Cheeseburgers/Cheeseburger Salad

Friday was busy for me, paying bills, running errands, cleaning and taking Hatchet to his (very expensive!) vet appointment!

So, I wanted something relatively easy for dinner Friday night — and decided upon a recipe I featured on the blog last week, as a “Daily Delicious” recipe: Deconstructed Cheeseburgers/Cheeseburger Salad — a recipe I discovered via RealFoodOutlaws.com!

My version of this recipe included the following ingredients:

  • 1 lb. ground beef (cooked in a pan with seasoning, salt + pepper)
  • bacon (baked in the oven)
  • red onion
  • shittake mushrooms
  • garlic
  • green leaf lettuce
  • Wisconsin beer cheese
  • sun-dried tomatoes
  • pickles
  • mustard
  • sweet potatoes (2-3)

First, the sweet potatoes were sliced into french fries and set aside.

2013-09-06 21.36.35Then, the bacon was baked in the oven for 10-15 minutes, until crispy.

2013-09-06 22.28.27(1)Then, the red onions, mushrooms and garlic were sauteed on the stove with butter and olive oil.

2013-09-06 21.49.09The sweet potato fries were then deep fried (oops — not Paleo!) and tossed with salt and pepper.

It was a delicious, low-carb way to have a Friday night burger night — and after a very busy day, it sure hit the spot!
