Five Paleo bacon recipes in honor of International Bacon Day!

Much to my surprise, I learned late Saturday, August 31st that it was International Bacon Day!!!!

bacon dayInternational Bacon Day is celebrated either on the first Saturday after the New Years in January, February 19th, or the the Saturday before Labor Day.

I mean, clearly I couldn’t NOT write a blog post celebrating this fabulous day — so better late than never right?!

In honor of International Bacon Day, I am sharing five awesome bacon recipes that are Paleo!!!

All you have to do is decide which one you’re going to make first 🙂

In no particular order…

#1: Bacon tacos!

In this recipe, the taco shells are made out of bacon! Low-carb and Paleo! Amazing!

tacoThe shells are made by weaving bacon together, and then baking the bacon weave in the oven, using the underside of a muffin tray to hold the taco shell together.

#2: Chocolate Bacon Almond Butter Bananas, courtesy Civilized Caveman Cooking Creations!

A nice feature of this recipe is the fact that it can be made and then frozen — stored in the freezer and popped into your mouth whenever you need a bite-sized snack!

Another plus — every ingredient in this recipe is ahhh-mazing!

Bananas, almond butter, chocolate chips, cinnamon and bacon — what more do you need?


#3: Bacon Guacamole, courtesy!

Guacamole is delicious in and of itself, and is filled with healthy fat from the avocado.

Guacamole is generally considered a garnish or a side dish, but I feel because it is so filling, a bowl of guac and a plate of veggies could be a meal!

The ingredients for this recipe are simple: cook the bacon, then mix everything together.

That “everything” includes avocado, lime, jalapeno, tomato, onion, cilantro, and cumin.

I might add some Frank’s Red Hot for a little added spice 🙂


#4: Bacon and Guacamole Sammies, courtesy!

SPEAKING of guacamole, and bacon — these Bacon and Guacamole Sammies courtesy NomNomPaleo are adorable, and would make a fabulous side dish or afternoon snack!

And this recipe is so ridiculously simple! NomNomPaleo includes a link to her recipe for Chunky Homemade Guacamole (or you can use your favorite guacamole recipe!)

You cook up the bacon until it reaches its desired crispiness, and then spread the guac between two slices of bacon and you’re ready to pop it into your mouth! Yum!


#5: Bacon-Wrapped Bleu Cheese Stuffed Dates, courtesy!

According to the web, dates are one of the very best sweet and versatile foods that can regulate the digestive process, and can significantly boost energy levels in people within half an hour of consuming them.

In this recipe, the dates are sliced open, filled with bleu cheese and then wrapped in bacon.

They are then baked for 20 minutes, flipped, and baked for an additional 10.

This would also make for a great side dish or dessert!
