Daily Delicious: Paleo-izing a recipe for Slow Cooker Sweet Garlic Chicken

I’ve been somewhat craving chicken lately — and I found a recipe this week for Sweet Garlic Chicken that can be made in the crock pot — and the picture totally drew me in!

This recipe isn’t Paleo — but I think with a few substitutions, it can easily be made Paleo.

I discovered this recipe via ZipList — which allows you to create online grocery lists and also save recipes into a recipe box.

According to it’s website, “ZipList makes meal planning and grocery shopping a breeze. Back to the recipe. Here is the ingredient list:

4-6 chicken breasts
1 cup packed brown sugar **
2/3 cup vinegar (I used apple cider vinegar)
1/4 cup lemon-lime soda (diet or regular) **
2-3 Tablespoons minced garlic
2 Tablespoons soy sauce **
1 teaspoon fresh ground pepper
2 Tablespoons corn starch **
2 Tablespoons water
Red pepper flakes

The items with asterisks (**) next to them are non-Paleo ingredients. I am interested in trying to Paleo-ize this recipe, and see if it still turns out!

In place of the brown sugar, I would use raw (preferably local) honey. This ingredient could also stand in for the corn starch, as honey is nice and thick and sticky — and I’m assuming the corn starch is used to thicken the sauce.

raw honeyI did a quick internet search, and Mark’s Daily Apple has a handful of suggestions that can be used as a corn starch replacement, including flour (Paleo of course), simply reducing your sauce, or using pureed vegetables in place of the corn starch.

If making this recipe Paleo, I would flat-out leave out the lemon soda, and either use water or lemon juice instead.

As for the soy sauce, instead of using something soy-based, I would instead toss in some coconut aminos, which is a soy free soy sauce (and is Paleo!)

coconut aminosOnce you have your ingredients together, getting this recipe on your plate takes time, but not much hassle!

Just mix your sauce ingredients together, pour the sauce on top of the chicken (which is already inside the slow cooker), and cook everything on low for 6-8 hours.

I would likely use chicken breasts for this recipe, as that is what I like — but you could probably use a whole chicken if you’d like!

The end result should be a juicy, sticky sweet garlicky shredded chicken.

Just off the top of my head, I would consider pairing this with some oven-baked carrots drizzled with olive oil, a side salad and some red wine 🙂
