Norweigan salmon and corn-on-the-cob for Saturday Night’s Dinner!

This weekend, Friday Night’s Dinner was leftovers — so on Saturday I wanted to get into the kitchen and cook up something delicious!

It was a beautiful day, so the boyfriend and I took a ride and hit up Empire Fish Company for some Norwegian salmon!

We purchased nearly two pounds of salmon, which was then smothered in lemon juice and olive oil, coated in crushed pecans and Old Bay seasoning, and topped with sliced lemons and fresh dill, before being baked in the oven for 30-45 minutes.



The fish was served up with some corn on the cob, which was cut off the cob and served with butter and Parmesan cheese — finishing off a bag of fresh vegetables I won during our vacation up north in the fishing tournament raffle!


So delicious, and a healthy way to put an end to the weekend and get ready for a new work week!
