Earlier this week, I posted a “Daily Delicious” featuring a summery kale salad that reminded me of a kale salad I’ve been eating this summer via my grocery store’s deli.
I’ve been thinking about making my own, and a friend of mine tried out a kale, avocado and tomato salad this week that looked really good!
Then, I discovered THIS RECIPE, for a Warm Kale Salad with Bacon Dressing via The Preppy Paleo — and now I’ve got even more ideas for my kale salad!
This recipe calls for kale (0bviously), shallots, dried cranberries, ACV, and cashews!
The grocery store’s kale salad consists of kale, cut into thin strips and massaged, maybe with some olive oil, coconut oil or balsamic vinegar.
The salad also includes sun-dried tomatoes and pine nuts.
The recipe for kale and avocado salad via “In the Kitchen with Amy Jo” is just simply kale, red onion, garlic, lemon, olive oil, and avocado!
I have gotten a few requests that I recreate the grocery store kale salad — and I am thinking a mix of the three recipes would be really delicious!
My kale salad may consist of:
- sun-dried tomatoes
- red onion
- A Bacon Dressing — made with bacon grease (?), lemon juice, ACV, balsamic and seasonings.
I think this would be a great way to make this kale salad my own — and combine all three recipes into one unique salad!
Another benefit to this recipe is that it is a raw food recipe (no cooking required!) — other than the bacon, of course! Also, is just packed with nutrient-dense veggies!
Going to have to give this one a try very soon!
