Daily Delicious: Vegetarian Halloumi cheese skewers

Halloumi cheese is something I’ve only had once, but I like it! Hell, it’s cheese 😛

Halloumi cheese is a Greek cheese, and is semi-hard and unripened brined cheese made from a mixture of goat and sheep’s milk.

halloumi cheeseThe unique thing about Halloumi cheese is that it has a high melting point, so it can easily be fried or grilled.

grilled haloumi cheeseI remember the LAST TIME I attempted to make a dish using Halloumi, and I had a difficult time finding it — probably because I wasn’t 100% sure what I was looking for!

Within the last two weeks or so, I have discovered that my local Trader Joe’s store carries Halloumi!

trader joes halloumiThen, I discovered THIS RECIPE via a Facebook post for Grilled Halloumi Cheese Skewers!

This recipe comes from KalynsKitchen.com — and is a vegetarian recipe.

Ingredients include Halloumi, mushrooms, and white onions that are seasoned in a mixture of lemon juice, red wine vinegar, olive oil, Greek seasoning — and I might even throw in some balsamic vinegar!

The mixture is then marinated in the fridge, before being drained in a collander, threaded onto skewers and either grilled or baked.

Grilling these skewers would be the preferred cooking method, but I’m sure baking them would be great as well.

I don’t have a working grill at the moment — so if I made these, I would definitely bake them.
