I only have one day (Saturday) to prepare for next week — and there is lots to do, so I am keeping things pretty simple for next week’s meals!
For lunch — I’m thinking of sticking with the green smoothie + bacon and cheese plan I was on this week.
I may instead make a simple quiche with eggs and greens and veggies, and have a slice of that for lunch.
For dinner, I plan on making Jalapeno Popper Bacon-Wrapped Meatballs(!!!) that I have featured on the blog via “Daily Delicious.”
This recipe comes from a blogger I frequently feature on the blog — I Breathe, I’m Hungry.
This recipe calls for turkey meatballs, stuffed with jalapenos, cream cheese, cheddar cheese and salsa, that are then wrapped in bacon and baked up in the oven.
I mean, just LOOK at these!
Saturday Night’s Dinner is still somewhat up in the air as of this writing.
I am considering making stuffed chicken breasts. Maybe something like THIS from FitPaleoMom.com — chicken breasts stuffed with spinach, bacon and mushrooms.
A sort of lemon/dill baked salmon dish — maybe with an avocado sauce?
Like THIS RECIPE from ThingsMyBellyLikes.com, which calls for five simple ingredients: salmon, lemon, sour cream, heavy cream and dill.
I might make an avocado sauce instead of using sour cream and heavy cream.
We’ll have to see what sounds good when Saturday gets closer!
