As this week ends, I’m already thinking about what I will eat next week — and it’s gotta be something EASY because I only have a one-day weekend this weekend since I had off on Wednesday and work on Friday.
Thus, I’m thinking about making meatballs — something I can just toss in the slow cooker!
I discovered THIS RECIPE for CORNED BEEF AND CABBAGE MEATBALLS(!!!!!) via I Breathe, I’m Hungry and was immediately intrigued!
They are made using canned corn beef, cabbage, eggs, almond flour and seasonings, and are pan fried.
They are served over the cooked cabbage with whole grain mustard.
I’ve always wanted to make my own corned beef and cabbage meal — and these meatballs just look fun, and super delicious!
Not sure whether I’ll employ this meatball recipe for next week, but it’s definitely in the running!
I’m definitely going to keep this recipe in mind for a twist on St. Patty’s Day!
