EATS!: Buffalo Roasted Cauilflower and Bleu Cheese Dressing

I discovered a recipe for Buffalo Roasted Cauliflower via and featured it here on the blog as a “Daily Delicious” recipe.

I decided to pull that recipe out, and make a Buffalo Chicken Roasted Cauliflower dish for lunch this work week.

Making this dish couldn’t be easier!

I sliced up a head of cauliflower…


Tossed it with some coconut oil…and roasted the cauliflower in the oven for about 30-40 minutes. Be sure to check on it frequently so it doesn’t burn!

P.S. If you’ve never roasted cauliflower, stop reading immediately and go do it! If you think you don’t like cauliflower, try it roasted!


When the cauliflower was roasted, I let the it cool, before tossing it with some Kerrygold butter melted into some Frank’s Red Hot — my favorite hot sauce!


Then, all that was left was making the chicken, which was just 3 chicken breasts slow cooked in Frank’s Red Hot.

I also crafted some easy bleu cheese dressing — using bleu cheese that I crumbled and some plain Greek yogurt.
