THIS RECIPE, for chorizo meatball tacos features ground beef and Mexican chorizo — and the tacos are served in cabbage leaves for a healthy, low-carb, Paleo dinner.
I still have a freaking CRAP-TON of salsa on hand, so I am thinking this might serve as a nice work-week dinner for next week!
I am considering substituting chicken sausage and some sort of leaner meat into this recipe instead of chorizo and ground beef.
The Hispanic-themed grocery store I go to every week sells the best homemade spicy chicken sausage and TONS of other meat — so we’ll see what I can find if I decide to go with this recipe for next week’s dinner.
