Monday’s Daily Delicious is a gorgeous summer side dish, courtesy of Cavegirl Cuisine!
It’s a Faux-Tato Salad — substituting PARSNIPS for potatoes — thus making this a Paleo dish!
Plus, this recipe calls for homemade Paleo mayo — a recipe I am working to perfect.
If you don’t want to take the time to make the Paleo mayo, and you just have to have this RIGHTNOW — I’m sure it would be delish with some dijon, some ACV and maybe a splash of lemon and/or olive oil — and maybe even some fresh dill — all the tastes of summer!
And of course, the most important ingredient: BACON!
The best part about this recipe is that it can be made ahead, and refrigerated before serving so all the flavors can meld together.
I can see this as a side dish on my plate very, very soon!
