As I prepped Saturday’s lunch on Saturday afternoon (i.e. — heating up leftovers from last night’s dinner), it occurred to me when I opened the microwave that I had completely forgotten an entire ingredient when I put together Friday night’s dinner.
The frozen peas and carrots I had intended on mixing into the “grits” was still in the microwave.
I heated it up and tossed some of the veggies on top of the grits, and then layered on my shrimp.
I had to cook up some more shrimp — but once the water was boiling, it was about a 2-3 minute job.
On the side, I finished off the leftover green beans.
Slow cooking in my kitchen was two racks of pork ribs, dry rubbed based upon THIS RECIPE from George at Civilized Caveman Cooking Creations.
This was to be Saturday Night’s Dinner 🙂
