This is not a Paleo recipe, as it calls for things like: Panko, buttermilk and cornstarch.
However, I think it could be made Paleo pretty easily.
I would likely sub shredded coconut flakes for the Panko, cocnut milk for the buttermilk — and would likely leave the cornstarch out entirely.
These would also likely be baked vs. fried to make them more Paleo-friendly and healthier overall.
It’s been awhile since I had chicken (before the rotisserie chicken this weekend) — and even longer since I made chicken nuggets like this!
I definitely think this recipe could make a fun weekend dinner — and if it’s anything like Bang bang shrimp, I’m sure it’ll be delicious!
