EATS!: FRIDAY’S Clean-out-the-fridge LUNCH

My mid-afternoon lunch, and first meal of the day for Friday was a sort of assembly of whatever leftovers I could find in the fridge — and at the same time, and attempt to make room in the fridge before my Friday evening grocery shopping trip for Friday night’s dinner ingredients.

I warmed up some leftover cauliflower rice to serve as a side dish to my two eggs with leftover mushrooms and peppers sauteed in olive oil.

I finished up some sauerkraut on the side — and topped my eggs with some raw cheddar cheese I already had on hand.

Simple, delicious and an assurance that food doesn’t go to waste!
